Breakfast in a mug. Caffeine, bananas, and eggs in a lazy morning treat! Coffee syrup and easy two-ingredient pancake recipe.
This was an experiment using freshly ground coffee to make a cane sugar syrup which was drizzled over silver dollar sized pancakes in a mug.
Super simple recipe.
Banana Pancakes
Mash together 1 banana, 2 eggs, and a pinch of salt. Add cinnamon if you like. Fry pancakes on medium heat in a lightly oiled pan. One tablespoon of batter will make a nice little 5-6 cm diameter pancake. You will get about a dozen mini pancakes from one banana and two eggs. Perfect for two coffee cups.
Coffee Syrup
Brew enough coffee grounds for two cups, but use only 100 ml (less than 1/2 cup) water. An Aero Press is handy for this step. Combine coffee concentrate with 250 ml (1 cup) cane sugar in a saucepan and reduce. Add a bit of vanilla. Syrup will thicken as it cools, so be careful you don’t reduce too far!
Stack six to ten pancakes in your mug.
Pour syrup over pancakes.
